Drying Persimmons, 10/25/07

Pick Hachiya persimmons when fully colored, but not soft. Leave as much stem as possible.
Leaving the stem and cap intact, peel the fruit using a potato peeler.
Tie a persimmon to each end of a length of string and drape over something so they hand down. a fording cloths drying rack works fine.
Once a week, massage each fruit a little to release the sugar cells.
Takes about five weeks and they'll keep for many months, longer if refrigerated.
Powder-looking sugar will form on the surface in time.
Note: Dry persimmons sell for about $25 a pound in specialty stores.
