Williamsburg Sweet Potato Pie, 11/23/04



2 cups cooked sweet potatoes (mashed, sieved, blended or processed)
1 cup light brown sugar
½ tsp. salt
½ tsp. ginger
½ tsp. cinnamon
1/8 tsp. ground cloves
½ tsp. ground nutmeg
½ vanilla extract
1 ¾ cup half & half
1 unbaked 9” pie shell

Preheat oven to 450.  Break eggs in bowl & whip until combined.  Add potatoes, sugar, salt & spices.  Blend well, add half- &-half and stir in well.  Ladle into pie shell.  Bake 15 min @ 450.  Reduce heat to 300 and bake approx. 30 min. more or when toothpick comes out clean.
