The Original Better Than Sex, 12/27/04

Many people, naturally, ask us how the name of this dish came to pass. Either during my cooking classes, or preparing a dinner party for eight, something would, invariably, strike the passion bone of one of my guests.“Wow, Bill, this is better than sex !”, which I ultimately took as a great compliment. It could have come in the form of a foie gras appetizer, a chocolate mousse, or even a BBQ marinated pork chop. More recently, over the last 3 years or so, there was a condiment at the restaurant that generated an abundance of “better than sexes”, to the point that marketing it seemed like the only way out. Instead, I am offering it to you here, to serve on your table for yourself, and special friends and relatives.

¼ cup good extra virgin olive oil
1 Tbs. fresh grated parmesan, romano, or asiago
2 Tbs. fresh chopped basil
½ tsp. rep pepper flakes
½ tsp. fresh chopped garlic
1 Tbs. roasted garlic:  take a head of garlic, slice in half, rub with olive oil, sprinklewith salt and fresh or dried thyme, wrap in foil and roast in 375 degree oven for 45 minutes.Cool, and remove with toothpick or by squeezing.
Salt and fresh cracked pepper to taste.Very important.

Place the olive oil and all ingredients on an oblong or small round plate.Serve with pieces or slices of good crusty French or Italian bread for dipping.Be ready to replace it, as it will go fast.And, get the recipe cards handy.
