Persimmon Oatmeal Cookies, 10/22/04

3/4 cup margarine
1 1/2 cup sugar
2 eggs
1 cup persimmon pulp
1 tsp. baking soda
1 tsp. vanilla
1/2 cup coconut
1/2 cup chop walnuts
2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. cinnamon
-  nutmeg, cloves, cinnamon can be substituted with 2 tsp all spice
1 1/2 cup oatmeal

Cream margarine and sugar.  Beat eggs.  Stir soda into pulp and cream into mixture.  Add vanilla and dry ingredients.  Stir in oats, coconut and nuts.  Drop by tsp onto greased baking sheet.  Bake at 375 for 10-12 minutes.
