Honey Baked Quince Slices, 12/28/04



4 medium quinces, about 2 lb.
4 Tbs. fragrant, light honey
2 Tbs. lime juice
3 Tbs. water

Quarter and peel quinces.With melon-ball cutter or very sharp knife, remove the entire core area, being sure no hard bits remain.Cut each quarter lengthwise into 4 slices.Arrange the slices closely overlapping in a baking dish about 7-8” wide and 10-12” long.

Drizzle honey evenly over slices to coat them; sprinkle with lime juice and water.Cover closely with foil.

Bake in center of preheated 300 degree oven for about 40 minutes to an hour, until slices are very tender.Remove foil, raise heat to 425 degrees, and bake about 10 minutes, until syrup is slightly thickened and slices are golden.
