Fig Jam and Fig Bread, 8/28/07



Fig Jam

4 lbs. Fresh Figs
1 Lemon
4 cups Sugar
1 cup Water

Wash and peel figs. Chop lemon finely, removing seeds.

Boil sugar and water together for 5 minutes. Add the figs and lemon.

Cool slowly until desired consistency. Put in covered, small jars. Store in refrigerator.



Fig Bread

2 Eggs - beat to thicken
1/2 cup Sugar
1/2 cup Vegetable Oil
1 1/2 cups Flour
1/2/ tsp. Salt
1 1/2 tsp. Cinnamon
1/4 tsp. Baking Powder
1 tsp. Baking Soda
1 1/2 tsp. Vanilla
1 cup Fresh and Peeled Figs

Mix above ingredients and pour into a greased loaf pan.

Bake 60 minutes at 350 degrees.
