6 medium seet potatoes (moist variety)
Nonstick vegetable spray
1 cup whole berry cranberry sauce
1/2 cup water
1/4 cup firmly packed brown sugar
1/2 teaspoon grated orange peel
1 tablespoon margarine
Preheat the oven to 400 degrees.
Scrub the sweet potatoes and spray with vegetable spray. Place on a baking sheet.
Bake for 40 minutes or until soft.
Cool, peel and slice lengthwise.
Arrange the sweet potatoes in a shallow, vegetable-sprayed baking dish flat side down.
In a saucepan, combine cranberry sauce, water, brown sugar and orange peel and bring to a boil. Reduce the heat and cook for five minutes, stirring frequently.
Add the margarine and pour the mixture over the sweet potatoes.
Reduce the oven temperature to 350 degrees and bake for about 30 minutes, basting frequently.
