Cider Roasted Squash, 9/21/04



4 Cup cubed and peeled Butternut Squash
1 Medium onion, sliced into wedges
2 Tbs. apple cider
1 Tbs. olive oil
¼ tsp. salt
1/8 tsp. pepper
1/8 tsp. ground nutmeg

Place squash and nutmeg in a greased 9 x 12 baking dish. Combine the remaining ingredients and pour over all. Cover and bake at 450 degrees for about 35 minutes or until tender, stirring every 10 minutes.  This goes great with chicken, ham or turkey.
