Broccoli Pesto, 11/2/04



2 cup broccoli floweret’s
1/2 cup basil leaves
2 lg. garlic cloves
1/4 cup pine nuts
1/2 tsp. salt
1/4 tsp. pepper
1 cup olive oil

Place all ingredients in blender, process until smooth.  Toss with buttered pasta and 1/2 cup parmesan cheese.


Pesto

2 cups basil leaves fairly packed
1/2 cup each Romano and Parmesan cheese
1/2 cup olive oil
12 blanched almonds
12 blanched walnuts
-  almonds and walnuts can be substituted with 3 - 4 Tbs. pine nuts
1 - 2 garlic cloves
few squeezes of lemon juice

Process in blender till smooth.  Toss with pasta or gnocchi.
